You can use any sparkling wine, prosecco, or whatever carbonated wine suits your fancy. Make a French 75 recipe game out of it, try making the French 75 with a Brut, with a Prosecco, with a California sparking wine and see how things change. Go more dry, less dry and see if it makes you love the French 75 more or less.

1 oz / 30 ml London Dry Gin
.5 oz / 15 ml Simple Syrup
.5 oz / 15 ml Fresh Lemon Juice
3 oz / 90 ml Champagne
